Granola

  • 2 tbls coconut oil or butter
  • 2 tbls honey or maple syrup
  • 1 cup quick cooking oats
  • ¼ tsp cinnamon
  • ½ cup various nuts, seeds, dried fruit or coconut flakes
  • Pinch of salt

Optional add-ins: raisins, craisins, dried apricots, candied ginger

Melt the coconut oil in a large skillet over medium heat, stirn in the honey. Add the oats, cinnamon and any nuts, seeds or dried fruit you are using.

Stir continuously with a wooden spoon until the mixture is golden brown, about 5 minutes.

Remove from heat, set aside to cook the apples.

 

Apple

  • 2-3 apples
  • 1 tbls coconut oil or butter
  • 1 tbls lemon juice
  • 1 tsp cinnamon
  • ½ tsp allspice
  • 1 tsp vanilla
  • ¼ cup coconut sugar or maple syrup
  • 1 cup granola

Melt oil in a skillet over medium heat. Add the slices apples lemon, cinnamon and allspice, saute until the apples become softened, about 5 minutes. Toss often.

Add in the vanilla and sugar and continue to cook until the sauce thickens and apples are tender, about 5 more minutes.

Sprinkle with granola and enjoy warm.
