Ingredients:

  • 2 heads of cauliflower, cut in small florets
  • 2 red tomatoes, chopped
  • 1 avocado, chopped
  • 1 cup cucumber, seeded and diced
  • ¼ cup white or purple onion, sliced finely
  • Serrano peppers or jalapenos, chopped, to taste
  • Peppers in vinegar, to taste
  • ½ cup cilantro, chopped
  • Juice from 2 limes
  • Salt and pepper, to taste
  • Tostadas, for serving
  • Your favorite salsa, on the side

Directions:

Wash the cauliflower, tomatoes, cucumber, peppers, and cilantro.

Cut or dice all of the ingredients.

Boil water in a pot and add the cauliflower florets. After 2 minutes, remove from the water and run the florets under cool water (optional).

Add all of the ingredients together in a bowl.

Season the mixture with salt and pepper to your liking. Mix well and serve with tostadas!

Note: Let the mixture rest for at least 30 minutes so that the flavors have time to mix very well.
