Friends from Erie Neighborhood House shared samples and answered nutrition questions from neighbors at the West Town Health Market.
Wash the cauliflower, tomatoes, cucumber, peppers, and cilantro.
Cut or dice all of the ingredients.
Boil water in a pot and add the cauliflower florets. After 2 minutes, remove from the water and run the florets under cool water (optional).
Add all of the ingredients together in a bowl.
Season the mixture with salt and pepper to your liking. Mix well and serve with tostadas!
Note: Let the mixture rest for at least 30 minutes so that the flavors have time to mix very well.
